Recipes:

Black Panther - Hearts of Wakanda 

8 cooked artichoke hearts

½ cup cornstarch

½ T kosher salt

½ tsp red chili flake

20 turns fresh cracked pepper

2 cups canola oil

½ cup blackberries, finely chopped

¼ cup toasted pecans, finely chopped

1 tsp balsamic vinegar

1 tsp maple syrup

Finely chop blackberries and pecans. In a small mixing bowl, mix together the chopped blackberries, pecans, balsamic vinegar, and
maple syrup. Set aside.

Mix together the cornstarch, salt, chili flake, and pepper. Set aside. Cut artichokes in half.  Heat 2 cups of canola oil over high in a small sauce pot. Toss the artichoke halves in the cornstarch mixture until well coated. Once oil is hot, fry the artichokes for 1 minute**
 

**If the oil is too hot, the artichokes will brown in less than 30 seconds, if the oil is too cold, they
won’t be golden brown by 1 minute. Test one artichoke before frying them all to ensure the oil is
hot enough. Artichokes should be crispy and golden brown.

After frying, let artichokes drain off excess oil by laying them onto a paper towel. Scoop a little bit of the berry mixture onto each artichoke. Serve immediately.

BlacKKKlansman - White Cover Black Bean Dip

1-2 cans of black refried beans

1 small onion finely diced

3-4 cloves of garlic, finely chopped

1 tbsp oregano

1 tbsp smoked paprika

8 oz oxaca cheese grated

1-2 cans canellini beans, drained and pureed

1 head roasted garlic

White Queso dip

In a skillet, saute the onion until translucent, then add garlic and saute for another minute. Add oregano and paprika and saute until spices are fragrant. Add the refried beans and stir to combine. Remove from heat and add in half a cup of the cheese. Transfer the refried bean mixture to a lightly greased casserole dish. Top with remaining cheese. In a bowl, combine the pureed cannelini beans with the roasted garlic and mix well. Add enough queso dip to make it pourable. Spread the white bean mixture on top of the black bean mixture. If desired, top with more cheese. Place in a 375 degree oven and bake for about 20-30 minutes until the dip is heated through and bubbly. Serve with tortilla chips.

Bohemian Rhapsody - We Will Rock Shrimp You

  • 1/2 pound rock shrimp or shelled and de-veined medium shrimp, finely chopped
  • 1/2 teaspoon finely grated orange zest
  • 1/2 teaspoon finely grated lime zest
  • 1 1/2 teaspoons finely grated lemon zest
  • Salt and freshly ground pepper
  • 1/4 cup all-purpose flour, for dusting
  • 2 large eggs, lightly beaten
  • 2 cups finely chopped kataifi
  • 1/2 cup heavy cream
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon minced chives

In a bowl, mix the shrimp with the orange zest, lime zest and 1/2 teaspoon of the lemon zest. Stir in 1 1/2 teaspoons salt and 1/4 teaspoon pepper. Cover and refrigerate until chilled, about 30 minutes.

Put the flour, eggs and kataifi in separate bowls. Divide the shrimp mixture in half. Using lightly oiled hands, shape each half into twelve 1/3-inch-thick cakes. Dip each shrimp cake in the flour and shake off the excess. Dip the cakes in the egg, then coat with kataifi.Transfer to a plate and refrigerate until ready to fry.

In a medium bowl, whip the cream until firm. Stir in the lemon juice, chives and the remaining 1 teaspoon of lemon zest. Season with salt and pepper.

Preheat the oven to 300°. In a large skillet, heat 1/4 inch of vegetable oil until shimmering. Add 6 to 8 shrimp cakes and fry over moderately high heat until browned and crisp, about 2 minutes per side; lower the heat to moderate if the oil gets too hot. Transfer the cakes to a baking sheet and keep warm in the oven. Repeat the process with the remaining shrimp cakes, adding more oil to the skillet as needed. Arrange the shrimp cakes on a warm platter and top each one with a small spoonful of the lemon whipped cream. Serve the cakes hot or warm.

Candied Bacon ‘Sheets’ (See Recipe)

For the Candied Bacon Cut bacon strips lengthwise to get to long strips Then cut in half (or thirds) Line a large baking sheet with parchment or tin foil and then place a bakers cooling rack in it. Lightly spray with non-stick cooking spray Taking six strips of bacon. Lay them on the cooling rack and weave like a basket. Repeat process. Then brush them with maple syrup and sprinkle with brown sugar. Bake in a 400 degree oven until the basketweave pieces are crispy. Take out and let cool. On another baking sheet, lined with tinfoil, place the graham crackers in rows. Top with a mini reeses and then marshmallow. Set oven to broil and place top rack about 6 inches below heating unit. Place the baking sheet with the s’mores on them and broil until the marshmallow begins to brown. Take out and place the bacon sheets on top and serve immediately.

Green Book - Symphony of Pies

1 package of pre-made pie crust

For the custard

1 ½ C Heavy Cream

3 Large Eggs

Salt, Pepper and Grated Nutmeg to taste

For the fillings

crumbled blue cheese and finely diced apples

finely chopped spinach (sauteed in butter) and crumbled bacon

Roll out pie crusts and then using a small juice glass or round cookie cutter, cut out circles in the pie crust and then press into a lightly grease mini muffin pan. Sprinkle a few dried lentils into each cup and blind bake at 375 until golden. Remove from oven and set aside. Mix all the custard ingredients and set aside. Then alternating, place a small spoonful of the fillings into each cup. Then top with a spoonful of the custard. Bake at 375 for 10-15 minutes until filling is puffed and lightly browned.

Roma - Mexican Jerks

FOR THE MARINADE

  • ½ tsp ground cinnamon
  • ½ tsp freshly grated nutmeg
  • 1 tbsp. allspice berries (use allspice powder if you can’t get hold of these)
  • 1 tbsp. peppercorns
  • 1 tbsp. finely chopped thyme leaves
  • 4 spring onions
  • 2 tsp chipotle chilli paste
  • 1 tbsp. dark brown sugar
  • 1 tsp salt
  • 2 tbsp. soy sauce
  • juice of 1 lime

FOR THE REST

  • 6 chicken legs/thighs
  1. Put the cinnamon, nutmeg, allspice berries, peppercorns, thyme, spring onions, chipotle chilli paste, sugar, salt, soy sauce and lime juice in a food processor (everything apart from the chicken).
  2. Blitz to a paste, then pour over the chicken. Massage in as much as possible (putting it all into a freezer bag is the easiest way).
  3. Leave covered in the fridge for as long as possible, preferably overnight.
  4. Place the chicken on a hot barbecue or grill for 10 minutes, moving around regularly to prevent burning. Move to a cooler spot and continue to cook for another 10 minutes, or until cooked through (cut into a thick piece to check the colour). Remove and leave to rest for 5 minutes before serving.

A Star is Born - La Vie en Rose Punch

1 bottle California rose wine, chilled

2 cups sparkling lemonade, chilled

1/2 cup blackberry liqueur, chilled

1 cup blackberries

1 cup raspberries

6 nectarines, sliced

1 lemon, cut into wedges

1 small orange, cut into wedges

Combine the wine, lemonade, liqueur, blackberries, raspberries, nectarines, lemons and oranges in a large pitcher. Serve over ice.

Vice - Open Face Sandwiches

Sandwich #1 Pumpernickel bread cut in small rectangles Thousand Island dressing Sauerkraut, drained Pastrami, cut into strips and grilled Swiss Cheese Sandwich #2 Rye bread cut into small rectangles Baked Ham Rarebit Sauce (recipe follows)

For Sandwich #1 Butter and toast the pumpernickel and place on a lined baking sheet Mix the thousand island dressing and set aside Place pastrami on top of each slice of pumpernickel, the top with a little of the sauerkraut mixture and top with a slice of swiss. Place in oven and broil until cheese is melted.

For Sandwich #2 Butter and toast the rye bread and place on serving plate. Top each slice of rye with ham and then top with rarebit sauce.

Can You Ever Forgive Me? - Buf-FAUX-lo wings

  • Store-bought Rice Krispie Treat bars
  • 3 Tbs Tangerine or Orange juice
  • 1 cup Dark brown sugar
  • Green licorice
  • Marshmallow creme (I used the Jet-Puffed brand in the jar)
  • Mini marshmallows

1.  Shape Rice Krispie Treats to look like chicken wings.

2.  Make a brown sugar glaze by mixing of 1 cup packed dark brown sugar and approximately 3 Tablespoons of tangerine juice.  Reduce on low heat in a saucepan until thick.

3.  If you want them to have the red buffalo sauce look, you may add a little red food coloring.

4.  Generously coat the wings in the glaze. Let dry on parchment paper.

5.  Cut the green licorice in half to look like celery.

6.  Chop up some mini marshmallows and mix in the marshmallow creme for the bleu cheese dipping sauce.


Mary Poppins Returns - Merry Poppers

Mini Sweet peppers, halved and trimmed

1 8oz package of cream cheese

1 C Mexican blend shredded cheese

1 can of crushed pineapple, drained

Candied bacon

For the candied bacon, prepare a baking sheet lined with parchment or foil and place a lightly greased baking rack inside it. In a shallow plate put about a ½ c of brown sugar and press a strip of bacon into it and flip making sure the strip is covered in brown sugar. Place the sugared strip on the rack and repeat process about five times. If desired lightly brush the sugared strips with maple syrup. Place the bacon in a 400 degree oven and bake for about 10 minutes until crispy. (Keep an eye as the sugars can burn easily)

Combine the cream cheese, Mexican cheese and pineapple together and then pipe into each sweet pepper half. Bake at 375 for about 10-15 minutes to cook through the cheeses. Remove and top with crumbled candied bacon.
