The Social Network - Final Clubs
Spread toasted mini-honey wheat bread slices port wine cheese and garnish with sliced roasted deli turkey and crumbled bacon.
- 1 cups (or more) olive oil, divided
- 2 pounds teardrop tomatoes, halved lengthwise, seeded
- 1 1/2 teaspoons dried oregano
- 3/4 teaspoon sugar
- 1/2 teaspoon salt
- 1 to 2 garlic cloves, minced
- 2 teaspoons minced fresh Italian parsley
- 1 baguette, thinly sliced crosswise, toasted
- Preheat oven to 250°F. Pour 1/2 cup oil into 13x9x2-inch glass or ceramic baking dish. Arrange tomatoes in dish, cut side up. Drizzle with remaining 1/2 cup oil. Sprinkle with oregano, sugar, and salt. Bake 1 hour. Using tongs, turn tomatoes over. Bake 1 hour longer. Turn tomatoes over again. Bake until deep red and very tender, transferring tomatoes to plate when soft (time will vary, depending on ripeness of tomatoes), about 15 to 45 minutes longer.
- Layer tomatoes in medium bowl, sprinkling garlic and parsley over each layer; reserve oil in baking dish. Drizzle tomatoes with reserved oil, adding more if necessary to cover. Let stand at room temperature 2 hours. DO AHEAD Cover; chill up to 5 days. Bring to room temperature before serving.
- Serve with toasted baguette slices.
Toy Story 3 - Sunnysides
- 4 egg whites
- 1 1/8 cups white sugar
- 1 teaspoon distilled white vinegar
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
- Lemon curd
- Preheat oven to 350 degrees. Beat egg whites and sugar in a large, clean bowl with electric mixer until stiff peaks form. In separate bowl, mix together vinegar, vanilla and cornstarch until smooth. Pour cornstarch mixture into egg white mixture and beat until thick and glossy, 4 minutes. Cover a baking sheet in parchment paper and draw an 8 inch (20 centimeter) circle in the center. Spoon or pipe mixture inside the circle, to within a little less than an inch from the edge. Place in preheated oven, reduce temperature to 200 degrees F, and bake 1 hour. Turn oven off and remove meringues. Using your thumbs, depress the center of the meringues slightly and leave meringue to cool. Once cooled, place a small dollop of lemon curd in the center of the meringue.
The Kids are All Right - The Kids are All Rice
**** Winner of the "om-nom-nom-nom" award for best appetizer!
2 tbs. butter
1c aborio rice (rissotto)
Pinch of saffron, it says optional, but really it’s not an option
1/3 c dry white wine
Several cups of boiling water
Salt and pepper
1 c grated Parmesan cheese, plus extra for garnish
2 large eggs
Melt butter in a large pot, pour in uncooked rice and cook for 2 minutes. Add saffron and wine. Cook until wine evaporates. Begin stirring in boiling water, enough to cover the rice. Keep stirring until water is absorbed. Add another cup of boiling water and continue process until rice is tender, about 20-30 minutes. Add salt and pepper, to taste. Remove from heat; mix in cheese and eggs. Place in refrigerator, covered, for at least 2 hours or overnight. Rice must be chilled.
2 tbs. olive oil
1 small onion, diced
4 cloves garlic, chopped
½ lb. ground beef
½ lb. ground pork
5 large sweet basil leaves, chopped
2 tbs. tomato paste
4 oz tomato sauce
1 tsp. sugar
½ c water
¼ c fresh or frozen peas
In a large frying pan over medium heat, add oil and sauté onions and chopped garlic for 2 minutes, and in the beef and pork and brown. Remove excess grease. Add in basil tomato paste, tomato sauce, water and sugar until it all becomes thick in texture. Add peas while still warm, take off heat and set a side. Add salt and pepper to taste. (This makes way too much filling for the recipe, cut it in half or save the sauce for pasta)
When ready to assemble. Coat your hands with olive oil. Take 2 tbs. of the rice mixture, place in hand and form a small cup. Place ½ tsp. of the meat mixture to the center of the rice cup. Add 1 tsp. of the rice over the meat mixture and roll into a ball. Make sure that the filling is covered. Roll the rice ball in:
Beaten eggs (about 3 large ones)
Then dip in:
Breadcrumbs, mixed with Good seasonings Italian Dressing.
Heat olive oil in a large pan until it reaches 360 degrees. Fry Arancini until browned on all sides. Place on a paper towel to drain. Before serving sprinkle arancini with Parmesan cheese.
Chipotle-Tomato Butter:
¼ yellow onion chopped1 tbs chopped garlic
2 roma tomatoes chopped
1 ½ tbs chopped chipotle peppers in adobo sauce
½ tsp Black peppercorns
1 C chicken stock
¼ stick unsalted butter
1tsp dried cilantro
½ lemon juiced
1 tsp kosher salt
In a sauce pot saute onions and garlic over medium heat. Add tomatoes, chipotle and peppercorns. Continue to cook for another 3 minutes. Deglaze with Chicken stock and lower heat. Coor for 5 minutes then place in a blender and blend until smooth. Place liquid back in sauce pot and and over low heat mount with butter, whisking in a little at a time. Add cilantro and season with lemon juice and salt. Turn off heat and allow sauce to steep for 5 minutes. Strain through a cheesecloth and reserve. Rewarm gently to serve.
Cheese-Corn Grits:
2 C chicken stock
1 C milk
1/8 stick unsalted butter
2 C instant grits
1 C grilled corn kernels
½ jalepeno peppers, small dice
2 C shredded white cheddar
½ Tbs dried cilantro
1 Tbs Kosher Salt
1 Tbs Black Pepper
Using a deep sauce pot combine chicken stock and milk. Bring to a simmer, add butter and let it melt completely. Slowly whisk in the grits a little at a time. When grits start to thicken lower heat. Switch to a spatula and fold in the rest of the ingredients. Adjust seasonings if needed. Rewarm gently to serve. If too thick add more chicken stock.
Bacon Wrapped Shrimp:
18-25 large shrimp, peeled and deveined
Bacon
Black Pepper
Grapeseed oil for searing
Wrap the shrimp with bacon. Season with pepper. Heat a skillet with grapeseed oil and sear to fully cook shrimp and bacon is crispy.
To serve
In a chaffing dish place a small bowl in the center. Pour the chipotle-tomato butter into the small bowl. Pour the grits into the chaffing dish around the center bowl. Place the cooked shrimp on the bed of grits. Assemble individual plates with grits first. Top with shrimp and drizzle the butter over it.
The Fighter - Irish Underdogs
1 Bottle of Guinness
3/4 C Brown Sugar
1Tbsp Mustard
1/3 C Catsup
1/2 Tbs. Horseradish
1/2 tsp. Worchestershire sauce
2 packages cocktail franks
Combine the first six ingredients in a saucepan and bring to a boil, then decrease heat. Add hotdogs to the sauce and cook slowly for about 30 minutes. The hotdogs should puff up and your liquid will boil down. Cook longer if you want a stickier sauce.
Notables:
Best Moment: Steven Speilberg mentioning that one picture would be named "Best Picture" and 9 would joining the ranks of "Citizen Kane," "The Conversation" and "Raging Bull" was pretty awesome.
Best Speech: Randy Newman gave us a taste of what Oscar nominees are instructed about before hand by disclosing that they were told taking a speech out of your packet is "Bad TV." So he didn't take out a speech, but instead chastised the Academy for only nominating 4 songs.
Running Gag:
Pre-show: "Is she freakishly tall or is he freakishly short?"
Ceremony: "Oh my God, James Franco is so high."
Worst Moment: Kirk Douglas and his enormous earlobes should never have been allowed to present - at least not on his own. He's a great actor and it was nice to see him and all, but seriously, that took f-o-r-e-v-e-r. And to be followed by Melissa Leo's rambling speech only for the orchestra to then play off Arron Sorkin minutes later made the whole thing all the more painful.
Worst Speech: It was a blah year and many of the speeches were blah too, but at first recollection, I'd have to go with Melissa Leo simply because her speech just. wouldn't. end.
Joel and Ethan Coen's remake of the western "True Grit" earned 10 Oscar nominations, including best picture. The original 1969 version of the film received only two nominations — lead actor for John Wayne, who won the award, and best song
