Seabiscuit  "C" Biscuits (with "horsey" cheese)

2 C Flour
2 Tsp Baking Powder
2 tsp sugar
3/4 tsp baking powder
1/2 tsp salt
2 tbsp chopped sage
5 tbsp unsalted butter cut into pieces
5 bacon slices cooked and crumbled
3/4 C Grated cheddar
3/4 C Buttermilk

Preheat oven to  450 and grease a baking sheet

In a bowl sift all dry ingredients (Flour-salt). Add sage and blend in butter with a fork until you get coarse crumbs. Stir in Bacon and Cheddar. Add buttermilk and stir until mixture forms a dough.  Gather and knead 8 times and pat down. Use a small round cookie cutter to cut out biscuit and then use either a smaller round cutter or cut by hand to make a 'C' shape. Place on baking sheet and bake for about 15 min.  Garnish with horseradish  flavored cheese spread.

11/2 C Black Beans
Garlic-to your taste
2 Plum tomatoes, seeded and diced
grated zest of 1 lime
3 tbsp lime juice
Cilantro
Tabasco Sauce
1/2 tsp unsweetened cocoa powder
1/2 tsp cumin
cinnamon
salt and pepper
1 Avocado
1 tbsp sour cream
Tostitos Scoops
1 Cup grated Monterey Jack Cheese w/ jalapenos

1. Mash the beans in a bowl. Add garlic, tomatoes, lime zest, 2 tbsp of lime juice, cilantro, Tabasco, cocoa, cumin, cinnamon, salt and pepper. Mix together well.

2. In another bowl, mash the avocado with remaining lime juice, sour cream and some salt to taste.

3. Put a spoonful of the bean mixture in each scoop and top with grated cheese and then place on baking sheet and put into a 350 degree oven until heated through. about 3-5 minutes. Remove from oven place on a serving platter and place a dollop of the avocado mixture on top of the cheese and beans.

Cold Mountain   Southern Deserters (otherwise known as "Dixie" delights)

2 1/2 C Peanut Butter
1/3 C Butter
2/3 C Dry Milk
2 C Powdered Sugar

Warm peanut butter & butter slightly, so you can mix it. Cream in Powdered sugar and milk press into pan. (Doesn't say to grease pan, but don't you think you should?)

5 oz Chocolate Chips
1/8 C butter

Melt together, and spread a thin layer over the top of the peanut butter . Cool and cut into squares.

Open bag of Hershey's miniatures, or tiny candy bars of your liking and arrange in a large bowl while singing "(What's so funny about) Peace Love and Understanding?"

Lord of the Rings: The Return of the King  Frodo Fingers

Deep fry or bake prepared mozzarella sticks and garnish with marinara sauce.

 

Mystic River  Kevin Bacon Dip

8 slices bacon, diced

8 oz. cream cheese, cubed

2 Cups shredded cheddar cheese

6 Tbs, half & half

1 tsp. Worcestershire sauce

1/4 tsp. dry mustard

1/4 tsp. onion powder

dash Tabasco sauce

 

Fry finely diced bacon in a skillet until crisp; drain on paper towels and set aside.  Place cream cheese, cheddar cheese, half & Half, Worcestershire sauce, mustard, onion salt & Tabasco in a slow cooker.  Set on low heat and allow cheese to melt, stirring occasionally for approximately one hour.  Taste and adjust seasonings.  Beofre serving, stir in bacon and serve directly from slow cooker. 

 

Pirates of the Caribbean: The Curse of the Black Pearl  Gold Coins

13 0z ground pork
1 tsp minced ginger
1 stalk lemon grass, minced
2 tbsp chopped chives or scallions
1/2 tsp chili paste
2 tbsp plum sauce
1 tsp chili oil
q tsp sesame oil
1 tbsp cornflour
2 tbsp minced garlic
2-3 eggs beaten
1-2 Cups Cornstarch
Salt
White pepper
Ginger


Combine ingredients in a food processor until well blended. Using a small ice-cream scoop, get a small portion of the meat mixture and form into small patties. Set on a sheet a chill for a 1/2 hour to an hour (until they are firm).

When patties are firm, get two shallow bowls. Place beaten eggs in one, and Cornstarch and spices in the other. Working a few at a time. Coat patties with egg and the dredge in cornstarch mixture. Place coated patties on a paper towel dusted with cornstarch. For a thicker coating repeat process. Fry patties in peanut oil in small batches until done.
Serve with Garlic Sauce and Indonesian Soy.


Indonesian Soy Sauce
1/3 C Packed Dark Brown Sugar
1/3 C Water
1/3 C Soy
2 Tbsp Light Mollasses
1 tsp minced ginger
1/4 tsp coriander
1/8 tsp white pepper.

1. Combine brown sugar and water in a small heavy saucepan and cook, stirring, over low heat for 1 minute to dissolve the sugar. Increase the heat to medium and cook at a very slow boil until the mixture thickesn slightly, about 2 minutes.
2. Recuse the heat to low and stir in the soy sauce, mollasses, ginger, coriander and white pepper. Simmer another 2 minutes, stirring frequently.
(This sauce will keep for 2 months if stored in a tight container in the refrigerator.)

2 parts Tequila

1 1/2  parts Peach Schnapps

1/2 part Blue Curacao

2 parts Margarita mix

2 parts peach nectar

 

Combine and prepare to lose your short term memory.

Best Acceptance Speech:  Tough year... most were pretty boring, but we'll go with Sean Penn who had planned on saying "This proves that you don't have to win a popularity contest to get an Oscar," but was so moved by his surprise standing ovation, never said it.   Also, this particular Oscarnazi took kindly to his cheeky reference to "WMDs."

 

Best Moment:  Billy Crystal's hilarious Mystic River song was by far the best he has ever come up with in all of his years of singing the best picture overture.  He gets extra points for sitting in Clint Eastwood's lap and referring to him as "Old man Eastwood."

 

Worst Moment: The look on Bill Murray's face when he didn't win.  Fortunately the mood was instantly lightened when Billy Crystal told him, "Don't leave Bill; we still love you!"

 

Running Gag: Predictability.  After a few years of finding nice surprises scattered throughout the show - and last year's surprise-apalooza, we had gotten accustomed to a few of the "sure bets" getting shot down.  Not this year.  In fact, The Lord of the Rings: The Return of the King sets a record for winning every award it was nominated for - a first since 1987's The Last Emperor.

 

The Eleven Club: The Lord of the Rings: The Return of the King ties Titanic and Ben Hur for the most wins for any movie: 11.

You can take the man away from the Hobbits, but you can't take the Hobbit out of the man:  Peter Jackson appears in his usual disheveled form despite springing for a custom made Versaci tuxedo.
